Queen Olive Cheese Balls (20)

Time 40 minutes

20 pitted large green olives
75g grated parmesan cheese
60g butter, diced
100g plain flour
Salt, cayenne pepper
1 egg yolk beaten with 1 tbsp water
1 tsp poppy seeds

Oven 180°c
Put the parmesan, butter, flour, salt and cayenne in a food processor and pulse into a pastry.
Dry the olives well.
Split the pastry into 20 pieces and cover each olive. Make sure there is a good seal rolling the pastry olive in the palm of your hands.
Chill for about 30 minutes till firm. Brush with beaten egg, sprinkle with poppy seeds and bake for 20 minutes.
Can be frozen and cooked from frozen.
